Tomato soup (serves 6)

A quick and delicious soup! A tomato soup with all the flavour and no time-consuming roasting 😊

Ingredients:

  • 1/4 cup butter/ margarine
  • 2 large leeks, halved lengthwise and sliced (white & light green parts only)
  • 2 cloves garlic, minced
  • 170g (6 oz) tomato paste
  • 4 cups chicken stock
  • 2 cans whole tomatoes, undrained & cut up
  • 1 Tbsp honey/ sugar
  • 1 cup cream
  • 1/2 cup chopped basil
  • 2 Tbsp lemon 
  • 1tsp lemon zest

Method:

  1. Heat butter/ margarine and sauté the leaks, stirring occasionally until softened
  2. Stir in garlic and cook for 2 minutes
  3. Stir in tomato paste
  4. Add chicken stock, tomatoes, and honey and bring to the boil. Allow to simmer for 15-20 minutes
  5. Using a stick blender, blend the soup until smooth
  6. Stir in cream, basil, lemon juice and zest

Tips

  • Use the stick blender directly in the pot
