Lentil soup (serves 6)

A tasty soup to warm you up.

Ingredients:

  • 2 Tbsp butter/ margarine
  • 1 onion, chopped
  • 2 celery stalks, finely chopped
  • 2 carrots, diced
  • 1 cup lentils
  • grated rind of 1 lemon
  • 5 cups of vegetable stock
  • salt and pepper to taste

Method:

  1. Heat margarine and sauté the onions
  2. Add the vegetables and allow them to sweat for 5-10 minutes
  3. Stir in lentils, lemon rind, stock and salt and pepper
  4. Bring to the boil, reduce heat and simmer for 15-20 minutes 

Tips

  • You don't puree the soup so cut the vegetables the size that you will want to eat them
  • You can use chicken or beef stock instead of vegetable stock. I have also used ham stock before which gave it a really nice flavour
