Chicken vegetable soup (serves 6)

This is a soup that my gran used to make when my mom was little -easy and delicious!

Ingredients:

  • 750ml (25 fl oz) chicken stock
  • 1 chicken breast
  • 1 Tbsp rice
  • 4 carrots, grated
  • 2-3 turnips, grated
  • 1 leak, chopped
  • 4 sprigs of parsley, chopped
  • 1 tsp mild curry powder
  • salt and pepper to taste

Method:

  1. Bring stock to the boil
  2. Add rice, chicken, carrots, turnips, and leak
  3. Add curry powder
  4. Sean to take and then add parsley
  5. Simmer for about an hour (until veggies are soft)
  6. Shred chicken once cooked and add back to the soup

Tips

  • If the soup is too thick, you can add some water
  • You can add some more chicken stock for extra flavour if needed
